Raw Pesto Pizza

Ingredients

Raw Cheese

  • 1 cup raw cashews (soaked for 4 hours in filtered water)
  • 2 tbsp nutritional yeast
  • 1/2 tsp apple cider vinegar
  • 1 pinch oregano
  • 1/4 tsp garlic powder
  • 1-2 tbsp water for thinning

Raw Pesto

  • 1/2 cup raw walnuts
  • 2 cups basil leaves
  • 1 tbsp fresh lemon juice
  • 1 clove garlic or 1/4 tsp garlic powder
  • 1-2 tbsp water for thinning

Pizza

  • 1-2 packages Wrawps Pizza Crust
  • 1 cup spinach
  • 1 cup cherry tomatoes
  • 1 chopped green pepper

Instructions

  1. Raw Cheese - add all ingredients to a food processor or blender and keep blending until it's extremely smooth.

  2. Raw Pesto - blend the walnuts first until they are very small pieces. Add everything else and blend until  pesto consistency.

  3. Assemble your pizza! Spread a layer of pesto on the raw pizza crust. Add dollops of cashew cheese. Top with your choice of toppings.
