Coconut Curry Soup

Ingredients

  • 16 oz red lentils
  • 6 cups vegetable broth
  • 2 large carrots (peeled and sliced)
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 2 tsp curry powder
  • a dash turmeric
  • salt and pepper to taste
  • 1/2 cup coconut cream
  • 2 tbs pumpkin seeds (topping)

Instructions

  1. Bring red lentils, vegetable broth, carrots and all seasonings to a simmer and cover. Stir occasionally.

  2. Once thickened, swirl in coconut cream and top with pumpkin seeds
