We can’t get enough of this creamy, sweet and comforting bisque. It reminds us of the kind of soup du jour that is served with an overpriced salad at a fancy restaurant but minus the heavy cream and heavy price.
This is wholesome, healthy and can be batch cooked meaning you can have a lot on hand to thaw for those days that you need a quick lunch or just not in the mood to cook dinner.
The beautiful orange pigment found in carrots is beta carotene which is an antioxidant that is converted into Vitamin A, an essential vitamin. This can aid in glowing skin, a strong immune system, and good eye health. So your mother wasn’t lying when she told you that carrots will make you see better when you were forced to eat them as a child!
The recipe makes 16 servings but it can be easily halved.
Maple Carrot Bisque
Ingredients
- 5 lbs carrots
- 1/2 tbsp onion powder can sub with chopped onions
- 1/2 tbsp garlic powder can sub with minced garlic
- 1/2 tbsp ginger
- 1/2 cup maple syrup
- sea salt to taste
Instructions

Wash, peel and chop carrots

Steam until a fork can easily pierce the carrots

Add the carrots and the rest of the ingredients to a blender

Add water to thin and reach your preferred consistency

Serve immediately or freeze in an air tight container
