Raw Pesto Pizza

The pizza god’s have answered our prayers and gave us the drive and motivation to get extra creative in the kitchen and come up with a raw pizza! This has been on our minds since we started this raw vegan challenge two weeks ago.

Do you remember pizza lunchables from way back when? I believe they are still around but they bring me back to my childhood. Think of this raw pesto pizza as an adult lunchable but on health steroids!

All of the ingredients listed below are 100% raw, vegan, dairy-free, gluten-free, soy-free and plant-based. Can you say healthy much? Not only is it extremely nutrient dense, but we promise it’s delicious!

We used Wrawps pizza crust for the convenience, high-end ingredients and great taste. I’m sure you can find a raw pizza crust recipe on Pinterest but this month I didn’t want to spend a lot of time in the kitchen so Wrawps it is!

You can top your own personal pizza with fresh spinach, cherry tomatoes, diced green peppers, mushrooms or anything else your heart desires. Adding spices like red pepper flakes or oregano will provide additional flavor. If you want to keep this recipe raw and full of live enzymes, make sure not to add any cooked toppings!

The pesto and cheese store very nicely in the refrigerator for up to 1 week so you can make these pizza’s multiple times… high-end meal prepping!

Raw Pesto Pizza

Ingredients

Raw Cheese

  • 1 cup raw cashews (soaked for 4 hours in filtered water)
  • 2 tbsp nutritional yeast
  • 1/2 tsp apple cider vinegar
  • 1 pinch oregano
  • 1/4 tsp garlic powder
  • 1-2 tbsp water for thinning

Raw Pesto

  • 1/2 cup raw walnuts
  • 2 cups basil leaves
  • 1 tbsp fresh lemon juice
  • 1 clove garlic or 1/4 tsp garlic powder
  • 1-2 tbsp water for thinning

Pizza

  • 1-2 packages Wrawps Pizza Crust
  • 1 cup spinach
  • 1 cup cherry tomatoes
  • 1 chopped green pepper

Instructions

  1. Raw Cheese – add all ingredients to a food processor or blender and keep blending until it’s extremely smooth.

  2. Raw Pesto – blend the walnuts first until they are very small pieces. Add everything else and blend until  pesto consistency.

  3. Assemble your pizza! Spread a layer of pesto on the raw pizza crust. Add dollops of cashew cheese. Top with your choice of toppings.

Making Spinach Applesauce for my 6 month old! (btw Making Spinach Applesauce for my 6 month old! (btw, he loved it!)

6 apples (peeled)
1 cup baby spinach 
1/2 tsp cinnamon 
1/2 cup water 

On medium heat, add all ingredients except for the spinach. Cover for 10-15 minutes until apples are soft. When the apples are done, mix in the spinach. Blend & freeze for 12 servings!

We are also a few months away from transforming the famous art studio into a historical Airbnb, allowing passionate art enthusiasts to stay at the creative epicenter of where the majority of Burchfield’s journal entries and paintings were created. For over 37 years, I've lived under the ideal that nothing in life is black or white, but shades of grey filled with individualized nuances. Witnessing the strength of my wife growing and delivering this perfect baby has truly opened my eyes.

In my own life, there hasn't been a moment or memory that I would describe as such perfection but minutes right before this picture was taken was the exact moment. The purest thing I've ever experienced happened, hearing and then seeing my son for the first time.

Words really can't describe it, besides this exact memory will be one that I carry through to my final breath.

What’s crazy is that when we went on an Alaskan cruise many years ago, we stopped into one of the most beautiful Canadian city’s- Victoria, British Columbia. While there, we came across a vegan deli, @theverygoodbutchers and were so blown away by their food! Fast forward years later and we can’t believe we found their brand at Wegmans and are so excited to have this for Thanksgiving!
