Vegan Curry in a Hurry
This recipe gives you the feel of takeout minus all the extra fat, processed ingredients, and unwanted sodium. This newfound glory was given to us by our dear cousins, Jennifer and Mike Gall and it has saved us more times than we would like to admit!
Not only is the taste too close to legitimate take-out but it’s super quick and easy to whip up, hence the clever title (Thanks Jen!). Simply throw all of the wholesome ingredients into a pot and let the heat do the work for you! What you end up with is an absolutely delicious plant-based curry.
We like to serve ours over jasmine rice to keep up with the takeout feel. You can either make it from a box or do what we do and grab a frozen bag that pops in the microwave for 3 minutes. We have to keep it in line with the title you know…
So what we end up with is a healthy take on takeout…

Vegan Curry in a Hurry
Ingredients
- 2 white potatoes diced
- 1 tbsp coconut oil
- 2 cloves garlic chopped small (or 1/4 tsp garlic powder)
- 1 can coconut milk
- 3 tbsp red Thai curry paste
- 1 head fresh cauliflower
- 1 bag frozen mixed vegetables (we like peas, carrots and green beans)
- 1 bag jasmine rice (frozen)
