
Since my last post about kale doritos, I’ve been itching to add this nacho cheesy flavor to other foods. Hence the birth of this protein packed plant-based snack that will fuel you with lots of energy and give the satisfaction of truly “snacking”.
Even if you’re not a fan of chickpeas, once roasted, they take on a whole new crunchy texture. When it comes to the flavoring, anything nacho-cheese-like is my thing and these roasted chickpeas are going to be your thing too.
As a vegan, we can be deficient in Vitamin B12. This recipe requires a hefty dose of nutritional yeast which will help supplement your daily dose of B12. This yellow powder with a cheesy taste is a source of complete protein and vitamins hence making this a super healthy snack.
They are also pretty quick to whip up.. one mixing bowl, a baking sheet and you’re good to go with only 5 minutes of prep time.
Pro tip: Don’t be afraid to really coat these, you want the most flavor possible with every bite.

Nacho 'Cheese' Crunchy Chickpeas
Ingredients
- 1 can chick peas
- 1/4 cup nutritional yeast
- 1 tsp paprika
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp chili powder
- 2 tsp olive oil
Instructions

Preheat oven to 375 degrees.

Drain chickpeas and rinse well.

Dry the chickpeas in paper towels to absorb the liquid.

Once dry, toss the chickpeas into a mixing bowl with olive oil and seasoning.

Bake for 40-50 minutes and shake the baking sheet every 10 minutes to prevent burning.

Store in an air tight container.
