So I’ve been avoiding kale for a while now… I never liked the taste or texture. Honestly, it was just too “green” for me. That sounds so ridiculous now but I finally caved and bought a bag and decided to get on the kale chip train.
As I’ve said before, Alex and I are really aiming to get away from processed vegan food including chips but I didn’t want to give them up entirely. We both need the crunch in our lives so I made a cheesy dorito kale chip that is beyond good and I am forever kicking myself for not making this sooner!
It’s no surprise that kale is the king of the greens and that’s probably why I’ve been avoiding it… After digging around a little, I found that kale is the most nutrient dense foods in existence…how have I missed this? This is due to the extreme amount of nutrients and low caloric content. It’s very high in vitamin K, C, A, B1, B2, B3, B6, manganese, calcium, copper, pottasium, magnesium, and phosphorus. Kale is also bursting of antioxidants, reduces the risk of heart disease, contains cancer fighting properties, protects the eyes, and aides in weight loss. Woah, my mind is blown.
Pro tip: If you like things on the spicy side, add cayenne pepper.

Kale "Doritos"
Ingredients
- 1 bag kale
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp chili powder
- 1 tsp paprika
- a few grinds salt and pepper
- 1/4 cup nutritional yeast
- 1-2 sprays non stick olive oil or coconut oil spray
Instructions

Preheat oven to 225 degrees and line a baking sheet with parchment paper

Put all seasonings into a grinder until they are fine.

Destem kale and break it into large pieces.

Spread the kale on the baking sheet and use a non stick spray such as olive oil or coconut oil and lightly spritz the kale. You could also use a tbsp of olive oil and mix it into a large bowl.

Toss the seasoning on top of the kale (as much as you think is necessary - I had some left over)

Bake for 15 minutes or until crispy
