Let’s be honest, sometimes we don’t have two spare hours to cook a pan of lasagna nor feel like spending that time in the kitchen but we still desire a hearty homecooked meal…the struggle.
Well struggle no more because I threw together a lasagna dinner in 10 minutes. Yes, you heard me right, 10 minutes!
This dairy-free/meatless lasagna skillet tastes just like it’s been cooking for 2 hours. If you don’t believe me, ask Alex because he was most certainly fooled!
Since it’s just the two of us, we don’t need an entire pan of lasagna. We are currently focused on portion control since the summer months are coming up here in Buffalo so this is the perfect dinner for the two of us.
The secret ingredient that brings this cheese-less lasagna to the next level is Elmhurst cashew milk. You may think this is an odd combination, but it gives the sauce a creamy texture and a “rose”affect. I highly recommend that you do not leave this ingredient out!

Meatless crumble and vegan cheese is completely optional because it tastes just as good on it’s own. If you are going to add, I recommend Gardein meatless crumble, Parmela nut cheese or Miyokos mozzarella. Pair it with a side salad and you’re good to go!
10 Minute Lasagna Skillet
Ingredients
- 5 pieces whole wheat lasagna noodles
- 2 cups marinara sauce
- 1/2 cup Elmhurst cashew milk
- 1/2 cup frozen spinach
- 1 tbs nutritional yeast
- 1 cup beefless crumbles -optional (we like Gardein)
- 1/2 cup vegan shredded cheese- optional (we like Parmela Creamery)
Instructions

Break lasagna noodles into smaller pieces

Bring water to a boil and add the noodles until done

In a pre-heated non-stick skillet, add marinara sauce, nutritional yeast, cashew milk and beefless crumbles

If your marinara sauce doesn't have italian seasoning, add your own

One noodles are done, drain and add to skillet along with the frozen spinach

Mix in vegan cheese (if using) and heat for a few minutes until all is combined and serve!
