Here are two plant-based spins on our favorite southern comfort foods. Give your body guilt-free food it can thrive off of while feeling the gratificaton of a warm hearty meal. You deserve to feel good. All vegetables, all nutrients and it’s all good!
These mashed potatoes can be eaten everyday, that’s how healthy they are! I strongly believe your palate will change once you go plant-based. Back in the day, the butter that I ‘had to have’ on my mashed potatoes are not a necessity anymore even though there is vegan butter on the market. We get into a mindset where we automatically attribute potatoes to butter. Once you change that way of thinking, your meals will instantly become healthier.
Oh and can’t forget about the gravy. The best gravy recipe that I have EVER had can be found here. Highly recommend!
I know a lot of people who are not plant-based think that this lifestyle is expensive. This is not true and I have provided a breakdown below of the exact cost to debunk this myth.
If you’re already plant-based, most likely you have the notorious staple, nutritional yeast. Also, most households have flour but I will include the cost of every ingredient below.
Now divide the total bill by 4 servings.
1 serving equals $4.11.
If you want to make this meal even cheaper, add another head of cauliflower to the list and plan to have this meal twice a week. The cost per meal would now only be $2.42!
I must mention that these items were from my local grocery store, Wegmans, which isn’t relatively cheap. You can find these items at other stores such as Aldi for a lot cheaper.
Kentucky 'Baked' Cauliflower
Ingredients
- 1 large head cauliflower
- 1/2 cup unsweetened almond milk
- 1/4 cup whole wheat flour
- 3/4 cup whole wheat bread crumbs
- 1/4 cup nutritional yeast
- 1 dash pepper
- BBQ or hot sauce optional
Instructions

Break apart the cauliflower head into bite size pieces and preheat oven to 425 degrees

In the first small bowl, mix together the almond milk, flour and a dash of pepper

In the second small bowl, mix together bread crumbs and nutritional yeast

Dip the cauliflower piece into the first mixture, then the second and place on a parchment paper lined tray

Place in the oven for 15 minutes, flip the pieces and bake for another 15 minutes

Enjoy on it's own or toss with BBQ or hot sauce
The Healthiest Mashed Potatoes
Ingredients
- 4 large baking potatoes
- 1/2 cup unsweetened almond milk
- salt & pepper to taste
Instructions

Skin the potatoes and chop into large chunks

Place the potatoes in a pot and fill water to cover them

Bring to a boil and they will be done once softened

Drain the potatoes and use a hand masher to smooth

add the almond milk and salt and pepper to taste
