Kentucky ‘Baked’ Cauliflower

Here are two plant-based spins on our favorite southern comfort foods. Give your body guilt-free food it can thrive off of while feeling the gratificaton of a warm hearty meal. You deserve to feel good. All vegetables, all nutrients and it’s all good!

These mashed potatoes can be eaten everyday, that’s how healthy they are! I strongly believe your palate will change once you go plant-based. Back in the day, the butter that I ‘had to have’ on my mashed potatoes are not a necessity anymore even though there is vegan butter on the market. We get into a mindset where we automatically attribute potatoes to butter. Once you change that way of thinking, your meals will instantly become healthier.

Oh and can’t forget about the gravy. The best gravy recipe that I have EVER had can be found here. Highly recommend!

I know a lot of people who are not plant-based think that this lifestyle is expensive. This is not true and I have provided a breakdown below of the exact cost  to debunk this myth.

If you’re already plant-based, most likely you have the notorious staple, nutritional yeast. Also, most households have flour but I will include the cost of every ingredient below.

Now divide the total bill by 4 servings.

1 serving equals $4.11.

If you want to make this meal even cheaper, add another head of cauliflower to the  list and plan to have this meal twice a week. The cost per meal would now only be $2.42!

I must mention that these items were from my local grocery store, Wegmans, which isn’t relatively cheap. You can find these items at other stores such as Aldi for a lot cheaper.

For the past two years, we have made it our mission to renovate and preserve the property. We have created a virtual tour at burchfieldstudio.com where the public is able to see where he stood and painted over 120 works. This 33’x450’ property had a profound effect on his art and overall life but unfortunately it has gone unappreciated and unrecognized. Brittany & I wanted to share this special moment a Brittany & I wanted to share this special moment and celebrate with you all.. we hope it puts a smile on your face!

For over 37 years, I've lived under the ideal that nothing in life is black or white, but shades of grey filled with individualized nuances. Witnessing the strength of my wife growing and delivering this perfect baby has truly opened my eyes.

In my own life, there hasn't been a moment or memory that I would describe as such perfection but minutes right before this picture was taken was the exact moment. The purest thing I've ever experienced happened, hearing and then seeing my son for the first time.

Words really can't describe it, besides this exact memory will be one that I carry through to my final breath.

✍ Written for my baby boy to read someday, knowing he has already brought his mother and I so much joy.

Happy New Year from the Miller family 🍾

Just when we thought vegan turkeys couldn’t get Just when we thought vegan turkeys couldn’t get any better, we found this beast at Wegmans! What’s crazy is that when we went on an Alaskan cruise many years ago, we stopped into one of the most beautiful Canadian city’s- Victoria, British Columbia. While there, we came across a vegan deli, @theverygoodbutchers and were so blown away by their food! Fast forward years later and we can’t believe we found their brand at Wegmans and are so excited to have this for Thanksgiving!
