Looking for the perfect side to pair with your main course? How about an appetizer for a dinner party? My crunchy zucchini bites are simple to make yet delectable to taste. Zucchini’s have powerful heart healthy nutrients despite their low caloric status. 1 cup of zucchini is roughly 21 calories yet they contain vitamin A, vitamin C, phytonutrients, potassium and fiber. I like to serve these as a side with veggie burgers or pasta. Enjoy!
Crunchy Zucchini Bites
Ingredients
- 2 zucchini's
- 1/2 cup whole wheat italian bread crumbs
- 1/4 cup nutritional yeast
- 1/2 cup unsweetened almond milk
- dash corn starch
Instructions

Prepare two small bowls; 1 with the almond milk and a dash of corn starch. The other with bread crumbs and nutritional yeast.

Preheat oven to 375 degrees and prepare a baking sheet with parchment paper.

Thinly slice two zucchinis.

Dip a slice into the milk mixture and then then bread crumbs and repeat.

Bake for 20 minutes or until zucchini is crunchy.
