Whether it’s for breakfast, dessert or a post workout meal, I’ve been eating this every single day. And for good reason! It is filled with powerful superfoods so it’s a no guilt meal that is improving your health while you’re eating it. I bet you didn’t think you could ever say that about chocolate pudding! This meal is quick and easy with only 5 ingredients. It can be made the night before so if you’re having this for breakfast (like I do) it’s hassle free.
I must mention that I’ve had my fair share of plant protein powders and this one created by Amazing Grass is by far the best! You can experiment with other protein powders but I can’t guarantee the same taste. Without further ado, let’s get into the health and weight loss benefits so I can convince you to try this!
Benefits of Chia Seeds:
- Filled with antioxidants
- The carbohydrate to fiber ratio is almost equal therefore making this a very low carb nutrient. For example, 1 ounce of chia seeds has 12 grams of carbs and 11 grams of fiber, making the true carb = 1gram
- High in omega-3 fatty acids
- Can lower the risk of heart disease and diabetes
- Excellent source of calcium – the calcium is actually higher than most dairy products!
Benefits of Amazing Grass Plant Protein Superfood Powder (a full serving):
- 20 grams of complete protein from organic pea protein, organic quinoa, organic hemp protein & chia
- 2 full servings of fruits & vegetables per serving
- Superfoods including Alfalfa, Spirulina, Chlorella, and Acai
- Promotes lean muscle
- Aids digestion
- Satisfies hunger
Plant Protein Pudding
Ingredients
- 2 tsp chia seeds
- a little under 1/2 cup unsweetened almond milk (you can always add more milk depending on consistency)
- 1 tbsp unsweetened cocoa powder
- 1/2 scoop Amazing Grass Plant Protein Superfood Powder - Chocolate Peanut Butter (20 grams)
- 1 dash vanilla extract
Instructions
-
Add all ingredients to a food processor or high speed blender and blend for 30 seconds
-
Keep refrigerated for at least 1 hour to overnight
Recipe Notes
- I prefer the chocolate peanut butter flavor protein powder over the chocolate flavor. When making the pudding, I doesn't have a peanut butter taste.
- Feel free to add toppings such as cocoa nibs, dairy-free chocolate chunks, coconut whipped cream, granola, or fruit!
