Chocolate Peanut Butter Cereal Bars

Ingredients

  • 2 cups Brown Rice Crisps (I use Farmer's We Know Sprouted Brown Rice Crisps, see below)
  • 1/4 cup Natural Peanut Butter (I use Smucker's Natural Creamy Peanut Butter)
  • 1/4 cup Maple Syrup or Honey (if you consume)
  • 1/4 cup Dairy Free Semi-sweet Chocolate (I use Wegmans semi-sweet chocolate chips but you can use any brand or a bar of chocolate)

Instructions

  1. Add the peanut butter and maple syrup or honey to a small sauce pan. Heat on low until melted.

  2. Add 2 cups of brown rice crisps to a large bowl. Pour the melted peanut butter and maple syrup or honey into the bowl and mix well until combined.

  3. In a parchment paper lined 8x8 or 8x10 pan, mold the mixture into a rectangle or square depending on your pan size.

  4. Melt the chocolate in the microwave or on the stove and drizzle the chocolate on top.

  5. Place in the refrigerator overnight and slice into bars the next day.
