Lately, I have been obsessed with meal prepping buffalo soy curls like it’s no one’s business!
If you’re new to the world of soy curls, let me give you a quick run down on what they are. At first, I was a bit intimidated by them but with a little research, they are even easier then preparing tofu!
Soy curls are a vegan meat replacement made from 100% whole soybeans. The meat-like resemblence results from a special process of lightly cooking, and texturing. These little guys contain all essential amino acids and are so versatile! You can mix it with any type of sauce including but not limited to, spicy buffalo, teriyaki, and BBQ. The next recipe I am going to experiment with is ‘mongolian beef’ soy curls over jasmine rice and I will put that recipe up once perfected.
Buffalo Soy Curls
Ingredients
- 1 package Soy Curls (I use the brand, Butler)
- 1/2 cup Buffalo sauce (I use Frank's)
- 2 tbsp flour
- 2 tbsp nutritional yeast
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/4 tsp poultry seasoning
Instructions

Soak the soy curls in boiling water for 10 minutes. Once complete, drain the water and use paper towels to squeeze out the excess water.

Mix the soy curls in a large bowl with the flour, nutritional yeast and seasonings.

Air fry at 400 degrees for 5 minutes. Shake around and cook for another 5 minutes.

Once complete, mix the soy curls with the Buffalo sauce and serve.
I couldn’t find soy curls at my local grocery store, Wegmans, but I was able to purchase on Amazon and it’s totally worth it. To get the best game for your buck, you can order the 3 pack here.
