Hi everyone! I recently whipped this raw cookie dough treat together for a family party and it was a huge hit. Non-vegan family members couldn’t believe it was made without dairy. You can choose to top it with a chocolate layer or just eat it out of the bowl, either way it’s delicious. And did I mention it took 10 minutes to make?!
Raw Cookie Dough Slabs
Ingredients
- 1 cup flour
- 3/4 cup light brown sugar
- 1 stick Earth Balance butter (or 1/2 cup)
- 1 tbsp unsweetened almond milk
- 1/2 tsp vanilla extract
- 1/4 tsp sea salt
- 1-2 cups Wegmans semi-sweet chocolate chips (or any non-dairy chocolate chip brand)
Instructions

Soften the butter for 10-15 secionds in the microwave. Make sure it's softened, and not completley liquid.

Mix in the brown sugar, almond milk, vanilla and sea salt.

Once combined, add the flour and 1/2 cup of the mini chocolate chips.

Spread the cookie dough into an 8×8 inch dish. I lined mine with parchment paper for easy clean up.

If adding a chocolate layer to the top, melt the rest of the chocolate chips in a small bowl and pour over the flattened dough.

Freeze for at least 30 minutes and cut into slabs or squares.
