With the COVID-19 pandemic going on and being quarantined in our home, I thought I would try to spread a little cheer..hence the sprinkles!
I peeled my attention away from the never-ending News coverage and chose to focus on doing something that truly makes me happy, recipe creation.
The result? An easy, 1-bowl treat that can be whipped up pretty quickly. The thick glaze on the outside tastes like an old fashioned donut while the inside is a moist birthday cake explosion.
When so much negativity is happening around us, we need to try to focus on the sprinkles of life!
Birthday Cake Donut Holes
Ingredients
Donut Holes
- 1-1/4 cup almond or cashew flour
- 1/4 cup maple syrup
- 2 tbsp sugar
- 1 tbsp coconut oil
- 1 flax egg (3 tbs of water + 1 tbs ground flax seed)
- 1-1/2 tsp vanilla extract
- 1/8 tsp sea salt
- sprinkles (optional)
Glaze
- 1/2 cup powdered sugar
- 1-2 tbsp almond milk
Instructions

Add all of the donut hole ingredients into a bowl and mix until well combined.

Prehead oven to 350 degrees.

Roll into small balls onto a lined baking sheet.

Bake for 15-20 minutes.

For the glaze, add all of the ingredients to a small bowl and whisk until a glaze forms.

Once the donut holes have cooled off, dip the holes into the glaze. Refrigerate for 10 minutes and dip again. For a thick glaze, refrigerate and dip a third time.
