As you all know, we have embarked on a 31 day raw vegan journey for the month of January and one thing we didn’t think about was…dessert. If you know us, we always have to have a bit of chocolate in our day so I decided to experiment. After surfing through Pinterest and drooling over all the raw desserts, I mixed random ingredients that I currently had in my pantry to make a little something sweet of my own. The end result…raw brownie truffles and we’re obsessing!
This dessert is so delicious that I don’t think we’ll ever go back to baked or packaged desserts. It only consists of 4 ingredients and takes a few minutes to whip up, no baking necessary. What you will need is a small food processor or blender for this recipe.
I have also made this batter into raw brownies by pressing the mixture into a square container, slicing into small squares and refrigerating for at least 30 minutes. Below is the basic recipe, but feel free to roll the truffles in shredded coconut, crushed nuts or sprinkles. You can even get more creative by adding mint or almond extract for a different flavor… so many possibilities!
Raw Brownie
Ingredients
- 1/2 cup raw walnuts
- 1/2 tsp vanilla extract
- 1/2 cup cacao powder or cocoa powder
- 10 dates (pitted) soaked in warm water for 15 minutes
Instructions

Soak the pitted dates in warm water for 15 minutes.

Add all ingredients to a food processor. You made need to add a dash of water depending on your consistency and size of your dates.

Once the mixture is a brownie batter substance, use parchment paper to press the dough into a rectangle.

Refrigerate while making the chocolate frosting topping.
