Before you start looking at the ingredients and start judging, you have to trust me on this one! It’s a very strange combo but for whatever reason it works and it’s become one of our quick and favorite dinners!
I have included two recipes in this post. The second, avocado cream, we make quite often. It’s a simplified version of guacamole but it’s more of a creamier smooth topping. We have avocado cream with all of our mexican meals or as a snack with just tortilla chips. If you’re not daring enough to try the quesadilla, at least give the avocado cream a try!
To give it a little more heat, add Frank’s Red Hot Sauce (as Alex always does). Enjoy!
Sweet + Savory Quesadilla
Ingredients
- 1/2 cup black beans
- 2 whole wheat tortillas
- 1/2 cup mashed sweet potatoes
- 1/4 cup avocado cream
- 1/2 cup shredded lettuce
- 1.5 slices chao cheese creamy original
Instructions

Turn on quesadilla maker or George Forman if you have one. If not, heat a non-stick pan on medium heat.

Spread mashed sweet potatoe and sprinkle the black beans onto one of the tortillas.

Break up the slices of cheese and scatter on top of the black beans evenly.

Add second tortilla on top and start heating it up.

Once crispy on the outside, cut the quesadilla into slices and add a dollop of avocado cream and shredded lettuce.
Avocado Cream
Ingredients
- 2 avocados
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1 tbsp lemon juice
- salt + pepper to taste
Instructions

Add all ingredients to a small food processor.

Let chill in the refrigerator for at least 20 minutes.
